Summer Sausage Sauerkraut & Cheese Curd Casserole

If you enjoy a good ol’ Brat and kraut, then this yummy casserole dish is right up your alley!


1/4 C. Butter
2 to 2 1/2 LBS. Ohlemacher’s Summer Sausage (Any flavor)
2 – 16 Oz. Cans sauerkraut, drained
4 Strips bacon, minced and fried
1 C. Chopped onions
1/4 C. Uncooked white rice
1/2 TSP. Caraway Seed
1 Can 12 0z. Beer
1 – 12 oz. package of our Cheese Curds (Garlic/Dill, Habanero,  or White Cheddar)

Melt butter. Cut up summer sausage to desired size and Saute sausage till very lightly brown, turning frequently. In a casserole or baking dish add sauerkraut, bacon, onion, rice and caraway seed and half package of cheese curds. Break up Cheese curds in pieces.

Mix ingredients well. Pour beer over mixture.

Place summer Summer sausage on top of kraut. Cover and bake at 350 degrees for 40 to 50 minutes.

15 minutes before done add remaining cheese curds on top of casserole.

Serves 6 to 8 people
