How do you store summer sausage?

We recommend leaving sausage in vacuum packages until used to prolong shelf life. After opening a vacuum package, remove the remainder of the package. Re-wrap sausage tightly to keep air out. Wrap with saran wrap then foil. If sausage is moist, wipe dry before repackaging. Proper storage, safe thawing methods, and prompt usage will eliminate most sources of sausage spoilage. Thaw slowly in the refrigerator. Do not thaw at room temperature. If, in spite of proper handling, sausage looks or smells spoiled, use common sense and discard.

How long can I refrigerate summer sausage?

Dry/Semi Dry Summer Sausage refrigerates 4-6 months after the vacuum seal has been broken. Wrap with saran wrap, is the best way to store.

We carry only natural cheeses made directly from rich whole milk. As natural cheeses, they are prone to some crumbling. We recommend allowing cheese to come to room temperature before slicing. Most cheese can be frozen in its original packaging for 6-8 weeks and still maintain good quality. Once the original packaging has been opened, remove remaining cheese and re-wrap tightly to keep air out.

Is your summer sausage fully cooked?

Yes!  Our all beef summer sausage is fully cooked and can be served directly from a room temperature package.

Do you use artificial flavorings for your smokehouse flavor?

A.

No, we do not use artificial flavorings.  Our smokehouse flavor is produced from a real wood smokehouse and our summer sausage is hung and smoked for almost a full 48 hours before final processing.
